Mom's Macaroni Salad

This is the stuff I grew up with. It makes a great meal in the summer!

You will need…

1 box small elbow macaroni
2 cans small shrimp
1 bag frozen mixed veggies
1 jar green olives, sliced
mayo, mustard, olive juice

Cook the macaroni and rinse with cold water to cool. Mix in the shrimp, veggies, and olives with enough mayo to coat everything well, enough mustard that you can almost taste it, and a bit of the olive juice for bite. Chill before serving.

Cheating Tips: You can use a can of tuna instead of the shrimp.

Mexican Bean Salad

A couple of hours before a picnic, I remembered I was supposed to bring a salad-like thing. Not enough time to go buy supplies, not a lot in the house besides beans, …this is what I came up with!

You will need…

3 or 4 cans of beans - each one different - rinsed
Chopped onion
A box of dried vegetarian taco or chili mix
Olive oil

Put the dried mix in a bowl with some water to reconstitute it. Then throw everything together with enough oil to moisten it all well.

Chicken Salad

This works great both on sandwiches and greens.

You will need…

Cooked boneless chicken - cubed
Walnuts - chopped (about 1/4 cup for every 1 cup chicken)
Cream cheese - softened
Dijon mustard

Fresh chopped parsley

Mix the chicken and walnuts with the cream cheese until everything's covered well. Add mustard and parsley until it tastes good to you. Chill before serving.

Cheating Tips: You can use canned chicken to avoid cooking in the summer.
